Don't tell my kiddos but sometimes after Jim and I put them to bed I whip up a small dessert for the two of us to share. This small-batch chocolate chip cookie recipe produces two large cookies, so we can indulge without the temptation to go back for more.
Ingredients
2 tablespoons butter (I use Kerrygold Salted Butter)
2 tablespoons dark brown sugar, firmly packed
1 tablespoon sugar
Kosher salt
1/4 teaspoon vanilla extract
1 egg yolk
1/4 teaspoon baking soda
1/4 cup all-purpose flour
3 tablespoons chocolate chips (I often chop chunks from a chocolate bar because we rarely have chocolate chips in the house.)
Preheat oven to 350 and line a baking sheet with parchment paper or use a silpat liner.
In a microwave safe bowl, melt butter just until it begins to soften. Add sugars, salt, vanilla, and blend together by hand.
Add egg yolk and stir again.
Add baking soda and flour and stir until combined. Then add chocolate chips last.
The cookies will spread during baking, so make sure they are several inches apart on the cookie sheet.
Bake for about 8 minutes, or until edges are golden brown.
