As it turns out, this dressing is good on anything.
3 tablespoons plain greek yogurt
3 tablespoons mayonnaise
2 tablespoons Dijon mustard
1/4 cup finely chopped dill
1 lemon, juiced (about 3 tablespoons)
1/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Wisk all the ingredients together, taste and add more of whatever you think it may be missing.
We drizzled this on top of greens with steamed potatoes, asparagus, and torn chicken. It was delicious, but my hands down favorite was when I spooned this creamy dressing over avocado toast with a fried egg.
Toast a slice of bread.
Chop an avocado and season with a pinch of kosher salt and black pepper.
Fry an egg until whites are set, and yolk is still runny.
Assemble breakfast and then drizzle with creamy dill dressing.
